Abstract

The article explores the food resources available to the population of Northern Italy. Food is an important ethnographic source, allowing to analyze the specificity of cultural and socio-economic development of the region. Formation of food traditions are mostly related with climate and regional food resources. The main attention is focused on the characteristics of the territory and food resources, agriculture, regional specificity of nutrition in the studied areas. The aim of this study is to validate the diversity of the food culture among the population of Northern Italy. The research stresses the ethnic and cultural impact on food consumption and focuses on the ethnographic specificity of North Italian region insufficiently explored by the Russian scholars.
